It is a real cost to the company if to many people ask to hold something. You don't understand how these companies opperate if you say it isn't.
I'm a little iffy on this one, but I don't really have any knowledge of this part.
I always thought that people who asked for an ingredient to be held were helping the restaurants bottom line, and that it would be somewhat evened out by the people that ask for extra.
I understand that they would have to throw anything open away at the end of the day, but they would have to do that anyway. If they're throwing too much away, they simply need to not open as many.
