You do understand that even ground turkey has 50% of the calories coming from fat, right?
We mix 75% ground beef with 25% ground turkey. it is sooo darn good.
I use ground turkey or ground chicken more often than I use ground beef. Chili with ground turkey is darn good.

I believe the OP is referring to the amount of cals that come from fat. For example, 80% lean ground beef has around 70% of calories coming from fat.

fat comes out when you cook ground beef, are you suggesting we drink the fat cooked off the ground beef? somebody already thought of that , up there ^^^^
