and with ground beef, whether you buy 75/25 or 85/15, a lot of that comes out when you cook it, unless you drink the fat that cooks out

We were designed to eat natural foods, like animals and stuff that grows out of the ground. Eating processed stuff isn't that good for you. But then again, if you eat too much of anything you'll get fat. It's about (1) what you eat and (2) portion control.

I just add a little bit of grit, say sand or salt, and I have a cheap alternative to toothpaste!

1) You NEED fat to be healthy. But of course, everything should be used in moderation. Avoiding fat at all costs is a recipe for disaster and getting too much fat is clearly unhealthy.

2) You NEED proteins to be healthy, and meat is a very good way to get all of them.

3) Proteins really turn off your hunger. A little meat makes you fell full much faster. Thus you eat less and lose weight. Why else do you think the Atkins diet worked so well (don't believe any of the phoney pseudo-science in the Atkins diet).

4) As others have said, you can cut away excess fat, buy leaner meat, and/or cook much of the fat off.

Meat in moderation is one of the healthiest things you can eat. But you should only eat a couple of ounces per day on average. Just don't go for the 48 oz porterhouse.

I believe the OP is referring to the amount of cals that come from fat. For example, 80% lean ground beef has around 70% of calories coming from fat.
 
Try buffalo. Their fat layer is on the outside of the muscle so you can get very lean cuts, the fat isn't marbled through the meat like it is with beef. Even buffalo burger is better, provided the butcher doesn't throw too much fat in there to increase their profit margin.

I use ground turkey or ground chicken more often than I use ground beef. Chili with ground turkey is darn good.
