1) Make sure there aren't any wierd discolorations or large dark, soft spots. This is to make sure it hasn't started going bad yet.
2) When you tap it, there should be a deep, resonating sound. If it sounds "flat" then it isn't ripe enough.
It isn't an exact science and your mileage using my technique may vary.
