Looks good. How does it fare with bacon or sausage chopped up added?

Sausage is good in it too, just precook it separately to avoid greasing it up.

reading fail lol on the cheese is it block cheese cut or like bagged chese? do you add it after everything else is cooked to avoid cheese burning?

I buy small cheese blocks from the deli (except my medium chedder, which is blocks of Tilamook) and shred it for the meal.

I brown the potatoes first (using only pepper, a bit of salt, and about half the garlic), then drain and dry em. Then put em back in the cleaned pan with the veggies and seasoning for just a few minutes so as not to overcook em. Turn off the heat, sprinkle the cheese on, cover and let it melt for about a minute and a half. You want to pull it out before the cheese drips down and fries.

Mmmmmm.....fried potatoes with chopped onions and sliced jalapeno or serrano peppers...Cover with a couple of over-easy or over-medium eggs, serve with some fried slices of ham...

Wait...that was yesterday's breakfast.
