these cars are both really good. I would go for the volvo instead of the honda because of safety, IMO.

It's BASICALLY a rebadged Mazda 3 (with a bigger engine and I think all-wheel drive), but they share the same chassis...

Umm no it doesn't. The S80 has five star safety ratings on every category including roll over. The ES330 has 4 stars for rear seat side impact and rollover resistance.

accord does ok. accord probably costs less to maintain. volvos don't look bad anymore though the volvos that do get tested don't get 5 stars in every area though.
