Have you ever ordered a steak "blue?"

I've gotten it blue, though I ordered it rare. That was mildly irritating. Still good, but mildly irritating.

Raw beef (properly kept) is not nearly as dangerous as people think. 99% of the time the bacteria that live in raw beef are digested quite handily by your stomach acid. Out of the other 1%, half the time your immune system just fights it off anyway. It's incredibly rare to get something from beef, unless you're eating poorly-kept beef. Only order a steak blue if you KNOW it's fresh.

Usually I limit my raw beef intake to my favorite ethiopian dish, Gored Gored. It's beef cubes soaked in a spicy oil-based sauce, seared on one side and served with what can only be described as a spongy sourdough tortilla. You may think it's crazy, but wait until you eat it. Then you'll be hooked, much like a crack addict. On a related note, I need to drive to Sacramento to get my fix now.

Amused: a sign of a good steak is that it can be prepared blue and still be good.

Usually I have my steak medium or lower. But I love Tuna steaks quite raw, seared on the outside with some spices. (not talking about sashimi here, which is great).
Dammit, now you've got me stuck on tuna and I have to go take one of my chunks of yellowfin out of the freezer and cook it tomorrow.

I like steak tartare, but if I'm going to get a good steak, honestly, I want it medium rare. Perfect balance of flavor and texture.

I like it crusted with some fennel, try it if you haven't. mmm I haven't had that in a while, just sushi.
 
the one time I've ever ordered raw beef, it was part of an appetizer salad at one of the most highbrow places in town. I was curious, even if it was $15 for what amounted to 4-5 bites.

I took two bites and then watched a ladybug crawl out from under a piece of lettuce. not a good experience.
 
I once ordered something medium rare, but I couldn't eat it becuase I tasted the blood on my first few bites and it grossed the sh!t out of me..
 
I think it's ordered as "blue rare". I've had a steak blue before but I'm not a hufe fan of the texture, even with great filets. A blue rare steak is seared on both sides, it's not just a raw piece of meat out of the fridge.

I'll take it warm rare, or medium rare.

it's a degree of cooking like medium, rare, well done, etc... it's popular in france (officially its called "bleu")

but anyway, its barely cooked.. basically, still mooing

Check the list here if you can get it to load. (Seems to be uncooperative for me) or check in the yellow pages. Plenty of good places in SacTo for Ethiopian tastiness.
 
I want my steak very very well done. I'm talking burned to a crisp little black carbon deposit on the steak done. The best way to get that point to the chef is tell them that just when they think a human couldn't possibly want the steak cooked anymore, then cook it 10 more minutes and it should be ok. I admit sometimes it's slightly awkward ordering a really nice $30 or more steak and getting it well done with ketchup on the side for dipping, but its tasty, and I am a slave to routine.
 
I currently like a good steak rare and am contemplating the "blue/bleu" option. I love steak tartar and I think that a steak that was fine enough would be most delicious raw. Yes, I am embracing my animal side. 😀

Have you tried medium-rare steaks before? Maybe a prime rib w/ some horseradish sauce?
