I like my fish raw, but my steaks medium rare. I still need to get a cast iron skillet for my steaks.

There's this restauraunt near me that has just awesome steaks. The funny thing is, though, on their menu they say that they are not responsible for steak that is cooked well-done, but they say nothing about ordering steak that is blue.

They're probably not responsible for cooking bleu steak, because they don't cook it! :Q

Yes. I used to make sandwiches with raw ground beef in college and am still here among the living. I always order beef rare.

The best way to get that point to the chef is tell them that just when they think a human couldn't possibly want the steak cooked anymore, then cook it 10 more minutes and it should be ok. I admit sometimes it's slightly awkward ordering a really nice $30 or more steak and getting it well done with ketchup on the side for dipping, but its tasty, and I am a slave to routine.

You realize they probably search the back of the fridge for the most unappetizing cut of meat for you? I'm talking one they would no longer sell to a normal customer. Hell, if the kitchen is busy, there is a strong possibility they might throw your steak in the deep fryer in order to save some time.

Cripes almighty. People having steaks better than medium well? That's the absolute MOST I will ever have a steak cooked. People do realize that cooking a steak any more than that causes the natural flavors to be cooked right out of it, right? It also usually makes them tough as hell, so it's like eating a brick. How is that enjoyable? I'm guessing most smother the sh1t out of their steak with stuff like A1.

Because people have different tastes than you do?

Never done it myself but I heard someone order it the other night in the Marriott I'm stuck in.

I'll stick with medium rare, & I've only recently migrated to that (from medium).

I worked in a steak house for a while and we would have lots of people order filet mignon black & blue. Noone did this for the "lower grade" cuts.

Sear both over HIGH heat (usually open flame) to lock in the moisture. Once both sides are slightly burned, plate it up!

Can't eat it myself though. I need it at least medium.

Back in the late 70s my grandfather (who was a total ass) sent two steaks back because he ordered them rare and they came back well and medium, he then told that waitress to bring him a raw one, which he ate.

I think I've had this before, although it was called Lehigh Style. Or maybe Bethlehem Style or Easton Style or Allentown Style. It was some eastern PA geographic location Style.

It was charred heavily on the outside and very rare on the inside. It was very good.

Never had it, but would try it. I always get my steaks rare as it is. So tasty. Cooking it more kills the flavor.

And for the bacteria haters, on choice cuts of meat from a good stockyard, the possible bacteria is only on the outside of the meat. It doesn't penetrate to the center.

The local steakhouse serves a rare porterhouse that is purple and bloody in the middle. So frickin tasty!

Been there. My father has sent many a steak back to the kitchen with explicit instructions for the chef to place the meet on the burner over the flame for 30 seconds per side and no more.

Doesn't sound appetizing to me. I've recently started to enjoy ordering steaks medium rare (when I get the chance; it's not like I get to eat steak a whole lot:p), I don't mind red/pink in the middle...but I don't think I'd really be interested in eating totally raw beef (or just barely a step above raw).

I have actually heard the term blue before, but usually when I was growing up it was "blood rare", I prefer my steaks extremely rare like this usually with the center being signifigantly cooler than the edges.

Freezing doesn't kill most bacteria.
