Because they turn over stock quickly. It is the length of time that determines how much water vapor is drawn out of food, in addition to packaging that's air-tight. They may also have higher humidity freezers which reduces the burn rate.But why are store purchased frozen items not sealed?
I just throw raw meat into my freezer without packaging or anything. Never had a problem with it.
