I really don't know, but there is a reason it has a special word associated with it: Rancid. The taste/smell associated with it are byproducts of the bacteria breaking down the meat, and although cooking it will kill the bacteria it will not remove these byproducts. Calling them toxins may be a bit extreme as they probably won't kill you or anything. People have been eating rancid meat since the dawn of time because sometimes that is all they had, but I would argue that you are probably better off not eating it.Originally posted by: minendo

Rancidty is caused by the breakdown of fats by molecular oxygen in the presence of light, heat, time, etc. The production of ketones leads to the off flavors and rancid smell. It will not kill you, but it will not taste right.Originally posted by: Kyteland
