Food Porn: Mutter Paneer

I generally make a few dishes a week or so that includes a masala of some kind, and tonight it was Mutter Paneer (peas and Indian cheese).

Many of the ingredients came from the backyard, picked a few minutes before prep. The paneer was made from scratch, the spices ground by hand during prep.

About an hour of cooking with over 20 different ingredients and this was the result. It makes a mess of the kitchen, that's for sure.

Any Indian fans?
 
I like Indian food. But if I spend an hour cooking and messing up my kitchen I can come up with something a lot better than cheesy peas.

Guessing you've never had Mutter Paneer. It's not at all "cheesy." Properly done, it's about as good as Indian food gets.

Most places skimp on the spices, so it tastes nothing like it should.

Yeah, I love palak paneer. We make a paneer butter masala sometimes that's quite good, similar to butter chicken in flavor. The wife is a vegetarian, so we don't do any non-veg unfortunately.

It's decent. There's a pretty powerful fan in the range, but admittedly it still smells like garam masala (we use whole spices) for about a day. The basmati rice seems to linger on for longer actually.
 
What's the difference between saag paneer and palak paneer? They're both spinach and cheese, right?

That's a good question. In a lot of cases, they're spinach, yes; however, palak is always spinach and saag can be something else.

The wife informs me that saag basically means "greens", and that could include something other than spinach. Palak is always spinach.

Most restaurants use spinach for both dishes, though you'll probably find that anything called saag is usually reduced; that is, it has a firmer consistency, almost paste-like. Palak tends to be more of your typical consistency.

 
Indian food is the best. The wide variety of unique spices and ingredients has kept me from trying to cook it though. It takes too much initial investment.

Yeah. It can often just look like a bunch of slop. Maybe I should have said food fetish, but to me this looks delicious? You have to be into it?

Also, the reason it's that color is because of turmeric, cream and the tomatoes. It would otherwise be more of a brown, which looks a little less like dog food and more like... yeah.

 
I guess mutter paneer is better than peener butter.

Though....after loading the picture, I'm not quite so sure. One is certainly more fun to make. 😉

18k BTU per the specs. We love it. Having 5 burners makes cooking these types of dishes a lot easier. I can start everything all at once.

Looks good though. Nice job.

We use them, and while they help, the oil still splatters enough when we add spices that it leads to that nastiness. We clean up after dinner, but I've lost the battle in trying to keep it clean while cooking.

Wow, 18k is strong for a home kitchen burner, I'm jealous 🙂

We could use a new range, the one here when we moved in is almost 20 years old. However, I only have a 1" gas line running in, so I'm almost worried I couldn't feed that stove of yours.
