I generally make a few dishes a week or so that includes a masala of some kind, and tonight it was Mutter Paneer (peas and Indian cheese).
Many of the ingredients came from the backyard, picked a few minutes before prep. The paneer was made from scratch, the spices ground by hand during prep.
About an hour of cooking with over 20 different ingredients and this was the result. It makes a mess of the kitchen, that's for sure.
