I pay for fastmail.fm... because I think it's the best. Not because of the interface -- I initially thought that the interface was HORRIBLE, but it's really grown on me.

I really love it because it allows nested IMAP subfolders, POP/IMAP access, excellent rules & filtering abilities, and an excellent webmail client, all in one service.
