This pasty white boy has only tried Sushi/Sashimi a few times when I stayed in Hawaii.
Some I liked and some I didn't, but I didn't know what was in any of the selections.
Is there a guide someplace that will tell me what is in the different dishes - sunomono, wasabi, unakyu, ukiah, inarizushi, unagi, etc.?

Jzero -- GuybrushThreepwood knows his stuff. There are two basic kinds of eel, unagi and anago. Unagi is fresh water eel, and it doesn't have the slight bitter edge that Anago (salt water eel) has.

I like lots of kinds of sushi, perferably served with a good quality hot sake.

Hmm... Another interesting curiosity. The Japanese word for salmon is also spelled sake in English. The only difference is that the emphasis (or emphasis[/b]) is on the second syllable, instead of the first. :)

I don't know what it's called but.
Sashimi and Unagi on top of the roll
and has some tempura crunchy thing in the middle of the role. THE BEST!

Or you can be like a north Japanese like me and call it SHYA KAY. It is another common way of saying salmon in Japanese, especially in Hokkaido where I was born.
