provolone... maybe sharp cheddar, but cheese really depends on what I'm eating it with.

Many to choose from... brie or smoked gouda with crackers, swiss in sandwiches, feta with salad or some pasta dishes.
I have a brick of extra sharp vermont cheddar I'm working on with a box of Ritz, it's good.
