I might be wrong here, but the "long" isn't dragon, but the word for basket/cage or soemthing.

Heh, I have a shrimp/pork shiaomai picture too.

I actually didn't like the pork chop that much - I prefer it crispier with a little bit more breading on the outside. Kind of like tonkatsu, I suppose.

Oh, and Schfifty Five is right - "xiao long bao" sounds like "little dragon bun," but the "long" means the metal container found in picture 1 in the OP (or bamboo container, depending on location), not "dragon."

I made the porkchop today, It was good but it didn't come put like the picture. It came out looking like a batter fried porkchop.

how do you get the brown glazed look and what seasoning is on the one in the picture?

Sorry, don't have the recipe. The dumplings and pork chop are from Din Tai Fung in Arcadia (google it or look at the Zagat review if you subscribe). Fried pork chop is relatively easy to make, though.

That place is in Taiwan as well. Parents went to teh place in Arcadia and then my cousins took me to that restaurant in TAiwan. It's a good 20 min wait at least, and I had 20 of those freaking dumplings... I had a different filled one also (the non pork one) but I thought pork pwned.

BTW, these are typically better as thin skin ones (Shanghai style). They're known as Xiao Long Bao.

BTW, dumplings are generally a more northern China thing. Dumplings = thicker skin.... Xiao Long Bao more ocmmon in Shanghai, Taiwan, and maybe Hong Kong (although Siu Mai is their version of it)

Din Tai Fung? I've been there and the skin is great. But the filling is just average...
