I am looking for a good workstation NIC that dosnt eat at the CPU, used for LAN gaming, big file transfers, and cable/dsl connections.......Im not sure which one would be the best..... any suggestions? >>
Get the Intel model without the IPSec encryption onboard. For what you mentioned, you won't need it, although it is nice (read: as good as required) for W2K corporate environments if all traffic between client machines and servers is required to use IPSec.

Looks like they've discontinued the 100B and the 100+, in favor of the 100S and 100VE. For the money, go with the 100S, especially if you can get it through this.
Yes, the Intel NIC is a PCI bus mastering device. The only nics that I have run into that are not bus mastering devices are cheap no-name brands. Now, all brand name nics are bus mastering as far as I know.
