Does Horse meat taste bad or something?

with horse meat it would be tougher than shoe leather almost because there is no fat, only amazingly strong tightly packed muscle

It's all in the preparation/cooking.

Horse meat sashimi (a delicacey of Nagano region) is very tender and flavorful but try to grill it like a tenderloin and it will be terrible.

Fried whale meat cutlet is hard and not too pleasant, but whale meat nabe (like stew) or sashimi is great.
