CH fighter Stick USB, Pro Throttle and Pro Pedals for flight sims. Logitech G25 for racing and I have a saitek aviator as back up I got for $12 from amazon warehouse (first day they got popular, now its overpriced use stuff). Also go a belkin N52 for other games.
 
Logitech Wingman Force joystick that I haven't used for a long time (used for flight sims)
A pair of original Microsoft Sidewinder gamepads (no longer used since it's not USB)
A pair of Logitech Dual Action gamepads (used for Colin McRae Rally)
Logitech MoMo steering wheel used for racing (GTR2, Test Drive Unlimited, Dirt)
 
I have a Saitek X52 Pro joystick and throttle for Flight Sim, can't properly play a flight sim without a good joystick.

I feel your pain. I was like that. I'm getting the hang of it though. Less than 20 hours flying so I'm still relatively a newb when it comes to being a pilot. I can usually catch newbs though who make dumb mistakes by locking on to my plane without a clear lock. It's all about flying up and rolls when you want to evade missile locks and use the whole map.
