I don't like most cheeses. I hate the cheeses which are more like butter in taste and consistance - luckily they are rare in the US. I hate the taste of strong mold - making blue cheese and its relatives taste awful. I hate dry bland cheese - making most cheddars bad.

I do however like high quality jack cheeses. Habenero jack is my favorite, or a nice garlic and herb jack cheese. Both go great with crackers or just plain. Also I like cream cheese and its originator - Neufantal (spelling?).

I also like fake cheese - like nacho chip dip. Or velveeta. But of course those aren't cheeses.

I make my own cheese (mostly cheddars, feta, etc.) , so I'm a little biased, but my absolute favorite cheese is Irish Dubliner. If there's any cheese you must try, it is this one. I also like a good Cheshire cheddar, double gloucester, an English Wensleydale, and a number of others I can't recall right now.

The more pungent the cheese the better 🙂
 
hmm I LOVE cheese i will eat any that is around.

I have cheese and bread with almost every meal. heck sometimes it is my meal.

MOZARELLA...! just came back from a company meal and I gorged on mozarella and tomatoes...
it helps that I live in Switzerland - every darn piece of cheese in the store is goooood..

bloody expensive, but good stuff.... yummy
 
If its from WI, I'll eat it. I love cheese.

I don't like Blue Cheese. Something about mold on my food....reminds me too much of college.

I love mozzarella, I use it on everything. You could put it on a shoe and it would taste pretty good. I just love it.
 
Asiago's my favorite eating cheese, and it's great on pasta too.

Tillamook cheddar is a close second, with Wensleydale coming in third.

cheesecake, tiramisu kind.

But of course, the mascarpone cheese they use in tiramisu is the perfect dessert cheese.
