Do you guys install ALL the "Critical" updates?

Unless I know for a fact that it causes problems with something else, Yeah I do. And most of the other ones too. Doesn't hur tot have the exctra stuff.

I usually install all of the security updates, but ignore the IE upgrades.

The reason is simple: I DON'T WANT a new version of IE, dammit, and installing IE 6 over 5.5 SP2 just creates a bunch of new security holes that require Windows Update to be ran all over again. What a pain.

i had a service pack (think it was sp1 for win2k) make my computer do funky shizit. but that was it. the next service pack worked

SP3 did that for me, except had to format becauase of it Luckily, partitions are my jesus (jesii/jesuses?), so I didn't lose any data
