Ahh, but I'm not from Alabama. I'm an Ohio kid that moved south for school and just kinda stuck around.

The remaining kernels are called hominy. The hominy is then dried and ground into grits. Many brands are simply made with ground, dried corn, not hominy. White corn is more prevalent than yellow.
