Here is how I make them....
For a dozen:
Hard-boil the eggs. (should need to tell you how to hard boil eggs)
Remove the shells.
Split them in half and pluck out the yolks into a bowl.
Add a table spoon mustard, table spoon mayo, table spoon miracle whip (yes miracle whip) into the bowl.
Pinch of salt and black pepper into the bowl.
Squish/mash the yolks all around until you get a paste like consistency. Add more mayo if you want it a little thinner. Don't add more of the other two or it will over balance the taste.
Scoop up some of the mashed yolks and place back into the cut in half whites. Place in fridge to settle.
Many like sprinkling paprika or chili powder on them. Can also place half an olive or roasted garlic pod in the center of the yolk. Some do dill, but I don't like it. Some add a few drops of vinegar to the mix in the bowl above, but again I don't like it that way. Good devil eggs should have a creamy/sweet/tangy taste. The mayo provides the creamy, the mustard the tang, and the miracle whip the sweet. A hint of spice can be added with the paprika or chili powder. That's about the perfect recipe for me.

Mayo, mustard and egg yolks is all you need to make deviled eggs.
I like to add curry powder to mine and sprinkle with paprika. I usually do half this way and half regular. Top the regular ones with dill to differentiate them.
You only get the sulfurous smell if you over cook the eggs.I've never had them. The sulfur from hard boiled eggs is way too much for me. Do deviled eggs cut back on that at all?
Nope. I hate salty-sweet, with very few exceptions. A little off-topic, but I can't stand regular potato salad either. The best potato salad: potatoes, eggs, mayo, mustard, and dill (not sweet) pickles.So no one rushed home last night to try my recipe and report back? I am disappoint.
They need a pinch or so of cayenne. Where do you think the "deviled" part comes from?
I know people that say that they absolutely HATE miracle whip... until they try that version of devil eggs. It doesn't taste like what you think it will. for some reason it works and you wouldn't believe it until you try it.
Being absolutely serious here. If you think you'd rather be killed by a razor wielding baby than eat miracle whip, trying this recipe may make you change your mind.
Which is why I listed most of the other combinations that I've tried with that post I put above. Tried them all, that is the one that has actually received the most praise from everyone and has won contests. Although I haven't tried curry powder. May have to try that, but chili powder is close. Too much though and the flavor gets overpowered too easily. This is because the basic flavor of devil eggs is fairly light in the first place and it is very easy to push the flavor too far. Which is why I say you can ad more mayo (light flavor) and not more mustard or miracle whip as either would over power the recipe. Same goes for practically any thing else you can think to add to the recipe.
It's 75% fat but it's not a paste. Greek yogurt goes well with spicy stuff but if something calls for mayonnaise it's not a substitute, it's a different recipe.You can't make deviled eggs without a splash of vinegar.
Also, Greek yogurt instead of fat paste ("mayonnaise").
That would require me buying a jar of Miracle Whip... which ain't happening.
