Deviled eggs

My lord these are good. Never really tried them until recently. Anyone have any favorite recipes?

Here is how I make them....

For a dozen:

Hard-boil the eggs. (should need to tell you how to hard boil eggs)
Let cool a bit.
Remove the shells.
Split them in half and pluck out the yolks into a bowl.
Add a table spoon mustard, table spoon mayo, table spoon miracle whip (yes miracle whip) into the bowl.
Pinch of salt and black pepper into the bowl.
Squish/mash the yolks all around until you get a paste like consistency. Add more mayo if you want it a little thinner. Don't add more of the other two or it will over balance the taste.

Scoop up some of the mashed yolks and place back into the cut in half whites. Place in fridge to settle.

Many like sprinkling paprika or chili powder on them. Can also place half an olive or half a roasted garlic pod in the center of the yolk. Some do dill, but I don't like it. Some add a few drops of vinegar to the mix in the bowl above, but again I don't like it that way. Good devil eggs should have a creamy/sweet/tangy taste. The mayo provides the creamy, the mustard the tang, and the miracle whip the sweet. A hint of spice can be added with the paprika or chili powder. That's about the perfect recipe for me.

Yes, the devil eggs are awesome. I normally hate mayo, but I make an exception for satans salty eggs.

Deviled eggs and egg salad sandwiches are both delicious ways to eat the versatile huevo. Huevo!

I like to add curry powder to mine and sprinkle with paprika. I usually do half this way and half regular. Top the regular ones with dill to differentiate them.

You can't make deviled eggs without a splash of vinegar.

Also, Greek yogurt instead of fat paste ("mayonnaise").

I know people that say that they absolutely HATE miracle whip... until they try that version of devil eggs. It doesn't taste like what you think it will. for some reason it works and you wouldn't believe it until you try it.

Being absolutely serious here. If you think you'd rather be killed by a razor wielding baby than eat miracle whip, trying this recipe may make you change your mind.

Which is why I listed most of the other combinations that I've tried with that post I put above. Tried them all, that is the one that has actually received the most praise from everyone and has won contests. Although I haven't tried curry powder. May have to try that, but chili powder is close. Too much though and the flavor gets overpowered too easily. This is because the basic flavor of devil eggs is fairly light in the first place and it is very easy to push the flavor too far. Which is why I say you can ad more mayo (light flavor) and not more mustard or miracle whip as either would over power the recipe. Same goes for practically any thing else you can think to add to the recipe.

I've never had them. The sulfur from hard boiled eggs is way too much for me. Do deviled eggs cut back on that at all?

i like a slice of green olive (the pimento stuffed type) on top of the devil egg. The chopped onion/celery sounds good too. I'll have to try that

last time I had deviled eggs was at a restaurant that bills itself as a kind of Texas southern comfort food joint. The deviled eggs were horribly overpriced and tasted like shit. I think they put too much vinegar in them. Gross.

uhh, too much work. imo eggs straight up (hard boiled, over easy, raw scrambled as dip or in salad) are tasty enough

Nope. I hate salty-sweet, with very few exceptions. A little off-topic, but I can't stand regular potato salad either. The best potato salad: potatoes, eggs, mayo, mustard, and dill (not sweet) pickles.

That would require me buying a jar of Miracle Whip... which ain't happening.

It's 75% fat but it's not a paste. Greek yogurt goes well with spicy stuff but if something calls for mayonnaise it's not a substitute, it's a different recipe.

It is literally the only thing I buy Miracle Whip for. I use it for devil eggs only. If I don't use up the whole jar for a few batches then I toss it. I also buy the smallest jar for a reason. Luckily it does have a decent shelf life so I can make a batch and then wait a month before making another batch.
