Cookies for Santa: Oatmeal Cranberry White Chocolate Cookies

These cookies are perfect for the holidays! Santa would be proud. :biggrin:

The cookie itself has a mild flavor, but with the tart, yet sweet, Craisins, it's yummy! They taste best the day after they're baked.

Because I give credit where it's due, the big chunk of the recipe was posted by boomerang, whom I also consulted via PM. 🙂 I also used BoomerD's suggestion to use Craisins and white chocolate chips.

The adapted recipe:

INGREDIENTS

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons ground cinnamon
  • 1 cup Crisco
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/3 cup buttermilk
  • 1 teaspoon vanilla
  • 2 cups Quaker Old Fashioned Oats
  • 1 1/2 cups Craisins Dried Cranberries
  • 1 cup white chocolate morsels
  • Parchment paper, optional

DIRECTIONS

  1. Preheat oven to 375°.
  2. Sift together the flour, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the Crisco, sugar, and brown sugar. Add eggs, buttermilk, and vanilla. Gradually beat in flour mixture.
  4. Stir in oats, Craisins, and white chocolate morsels.
  5. Place golf ball-sized dough portions 2-inches apart onto greased cookie sheet or parchment paper. Flatten slightly.
  6. Bake for 12 minutes. Do not overbake.

cookies generally lose me after 2 "stuff" ingredients. I'd probably chuck out the oatmeal or white chocolate chips.

I was really sold on the raspberry cookies, but it lists "bakers ammonia" as a mandatory ingredient... I wasn't able to find it in stores anywhere and didn't want to have to wait to have it shipped (as it is, I'm already waiting on maple extract)

This is *almost* the best cookie ever. Add macadamia nut pieces to make it the best cookie ever. You can also use dried sour cherries instead of cranberries, but either works.

Except oats aren't "stuff" - try pulling those out and I bet you it would be completely different. It's just any other oatmeal cookie - you'd have to compensate by adding more flour and egg or oil if you choose to forego it, and it'd taste completely off. Your two "stuffs" would be the cranberries (I'd go with dried cherries though) and the white chocolate.
 
Allow me to threadcrap by saying "Booooooooo" to any cookie that pays homage to that false idol known as "white chocolate". It's white, but it sure as shit ain't chocolate.

I agree that it's not chocolate, but in some recipes, it's damned good...and "real" chocolate would overpower the flavors in the cookie.

Well, I'm pretty well stocked in everything else. I think I'm going to make some Jambalaya tomorrow, but I need to find a source for fresh caught shrimp. No more farm raised for me.

I hate cranberries but I looooove those cookies.

i certainly don't look for it (cranberries) in desserts/treats, but every once in awhile--like the holiday season--makes it worthwhile. 🙂
