Quite frankly, turkey can not replace beef. A 50/50 mix of turkey/beef at best is OK. Having said that doing a mix of 66/33 in favor of beef is much better. I use beef that is 85% lean. Warning. Do not use 93% lean. It tastes like crap. Basically, any recipe that calls for ground beeef can use a 50/50 turkey/beef mix.

I've done them in a 50/50 turkey/beef mix. Works nice. Note that these are not for meatballs and spaghetti but they are meant more for an appetizer. I eat them alone as a meal though. When i do low carb, high protein, I'll have these 4 nights a week. Make 3 pounds worth. Freeze as needed.

For veggies, I find a red and green pepper to be options to combine with onion. Red pepper works well with this recipe. I've done this in the 33/66 mix in favor of beef. Tastes yummy. 50/50 should work. Cliffs on this: Follow recipe! Adjust so that it takes 2 pounds beef, 1 pound turkey. I use a small yellow onion, a green pepper and a red pepper. All veggies are finely diced. Mix together. This is awesome! And provides leftover style meals! Have with mashed potatoes and green beans. Awesome!
Basically, I found that cutting any normal ground beef based recipe with 50% turkey tends to work. Pure turkey recipes always have tasted like crap to me.
Alsol, chicken breast. Awesome meal. Have with veggies. make 3 pounds in one shot. Then use leftover in chicken salads for lunch.
For chicken the easy way. Take a glass dish (oven safe). Toss the chicken (3 boneless skinless chicken breasts) in the dish. add a little water. Cover with a 16 oz can of tomatoes. Toss in oven at 350 for an hour. You can not over cook these really thanks to the water. Take out. Add salt to taste. Add some greens to the side. Done.
FWIW:
Not carb friendly. But I do this once in a blue moon. Take a sweet potato cooked and diced it. Mash some potatoes. Mix these together. Add a can of corn for more sweetness. Mix in a bit of butter. And you have some tasty smashed potatoes. EASY!
