that's mirepoix. which is 1/2 onion and 1/4 each of celery and carrot. trinity is 1/3 each. trinity is also the basis of NO creole, iirc.
Try making chicken or turkey soup without celery. It sucks.I can't understand why anyone would have anything against celery. Sure, it's not exciting, but it's almost entirely tasteless and composed of water, other than the high fiber content.
Holy trinity is onion, celery, and bell pepper.
