celery is awesome and it's necessary for good stews and soups.

I thought it was celery, onions, and carrots. At least it is in French cooking.

that's mirepoix. which is 1/2 onion and 1/4 each of celery and carrot. trinity is 1/3 each. trinity is also the basis of NO creole, iirc.

I can't understand why anyone would have anything against celery. Sure, it's not exciting, but it's almost entirely tasteless and composed of water, other than the high fiber content.

It probably wouldn't be in my list of favorite 100 foods, but it's alrite.

Try making chicken or turkey soup without celery. It sucks.
