I love carne asada, but I'm kind of a traditionalist (ie, not on top of fries ).
I take a flank steak, marinate it in lime, beer, coriander, a little cumin, crushed garlic and adobo powder, give it a good crusty sear on each side (or on a grill if I have one) to mdium rare, slice thin and serve with cebollitas, saffron rice, avocado salad, and fresh tortillas...mmm...one of my favorite meals. And flank steak is so CHEAP!
