but my confusion is in how you try to classify yellow mustard as mustard and everything else as "a sauce."

wtf is a "sauce" in your mind and how are real mustards somehow different from yellow mustard?

Brown mustard is Indian mustard, dijon is french. I prefer good old strong english mustard. Which is yellow, but not any old yellow mustard on the shelf.
 
I always called the stuff with tons of tumeric American mustard, which is my second favorite but usually pretty mild.
 
inglehoffer sweet hot mustard is by far and away my favorite condiment

a distant second is plain plochmans yellow mustard

I'm fond of Colman's. First encountered it in Ireland where you can buy it in foil tubes (kinda like toothpaste).

But I also like Gulden's. Surprisingly good for being so cheap.
 
The one thing I prefer yellow mustard on is soft pretzels. I'll get a pretzel from WaWa, and 10 packs of mustard to go with it. A pack is gone in 2 or 3 bites. I think it's the vinegar I really like. Yellow mustard is like a lightly flavored vinegar with body :^D
 
Dijon, or a spicy brown mustard. None of those disgusting sweet mustards. D:

Spicy horseradish mustard is the way to go.
