Having used both, I can say that you could do infinitely better for much less money by sticking to civilian guns
What do you mean? These are both civilian guns ...

Which gun would you guys say has more modding capability? I would have tohught the AK since it's been around longer and is no doubt more prevalent in the world but it looks like there is just so much more diversity in the AR-15's... stocks, barrels, grips, etc...
That may be another deciding factor for me

Depends on who this is for. I wouldn't want my younger son firing an AK47 until he was at least 12 but an AR-15 I'd consider giving to him at a slightly younger age. If the gun is just for you, I think you'll find more enjoyment with an AR-15 recreationally. But if you are getting this gun for home defense, the reliability and power of an AK47 will be your best bet.
home defense??? WTF is attacking you guys' homes? Mastadons?

I would say neither. I'd much rather have a handgun and get really good with it. You could always get a concealed handgun license and carry it around with you too.

An AR-15 would be useless against a mastadon.

Is that true? You can actually get a conealed handgun license and walk around the streets with one hidden in your coat? Kinda scary.

In many states, yes.
I don't see why it is scary. These are the most tightly regulated licenses outside of those who deal in NFA weapons.
