It can do it via DX10, but deferred shading renders AA in DX9 useless. Unless of course you use super-sampling.

The XBox 360 has 512MB of unified memory (and it takes less memory to run its OS compared to the PS3), but still, they have to keep to probably around 320MB of video memory to run the games effectively.
Even then, XBox 360 exclusives are few and far between.
I could talk about the Wii, but you get the picture.
Only PC exclusive games (or games that are ported to take advantage of a ton of video memory) will show a difference between the 320MB and 640MB GTS's. The only other way to exploit it is with insane resolutions or a ton of AA.
