Best way to eat fresh tomatoes

I took home a bunch of tomatoes from my mom's garden. I don't think they're going to last more than a few days... what's the best way to eat them? Of course I always just eat them raw out of the garden, but I don't think I can eat that many raw ones in such a short time. I was thinking about getting some crusty bread and topping it with cheese and tomatoes? I want to cook/process them as little as possible to preserve the flavor.
 
Bruchetta!

Just mix together the tomatoes, garlic, and basil with salt and pepper in a bowl. Let it all hang out and marinate while you toast some thinly sliced french bread. Apply and enjoy!

For some extra zing, roast some extra garlic in the oven and mash it into the bread before applying the bruchetta mixture
 
Crush them and put them on top of some noodles with a few other ingredients for a simple and delicious pasta sauce.
 
i normall slice them and top them with some mozzarella and garlic salt and broil them for a few min to melt the mozz

serve on nice toast

yea its great, seems the only thing that grows in our garden really well is tomatoes, last year we were still getting big ripe red ones well into november

No where did you ask how best to prepare them any other way....only what the best way was. I answered.

I like to scoop out the insides and and house a good tuna, turkey or chicken salad in the middle. It is tasty to eat the entire thing. 🙂
Also, get a good recipe for homemade tomato sauce. How about gespacho? (spelling i know!)
