Fullmetal Alchemist and Fullmetal Alchemist Brotherhood

I wouldn't waste your time with the original Fullmetal Alchemist, but Brotherhood is fine. They started the original anime when the manga wasn't even close to being done. That's why if you watch Brotherhood after watching the original series, you'll see that they start out very similar to each other.

Essentially, FMA is like the original Hellsing. It's a story that only follows the manga for a short time, and eventually deviates to a made-up story because the manga wasn't complete. The stories in both aforementioned animes are nothing like the newer release (FMA:B and Hellsing Ultimate).

I wouldn't expect that the op wants an ecchi fap-fest. 😉 Although, the best part of that anime is when they played John Murphy's song at the end of episode 1! If you don't know which song I'm talking about, then you must have never seen any of the movies that he's done music for as it's used in about every one. 😛

I thought it was pretty good for the first couple episodes. It went down hill fast.
 
I was going to to suggest some of the Gundam series, but instead i'll recommend the Legend of the Galactic Heroes. Its an epic 110 episode OVA (technically its an OVA)
 
I will have to go through my files, but when you say things like "No Mecha" are you saying that you do not want a CGI "Form blazing sword" kind of thing, or no sci-fi to speak of?

Full Metal Panic is not bad (not the best), with some decidedly impossible scenarios in High School, but entertaining overall.

Monster is great, and Death Note WAS great (Until we went to another letter, if you know what I mean). Claymore was really good as well, OUTSTANDING for a late 80's anime. Elfen Lied was also good, albeit very violent. Not quite as violent as Shigurui. That was great, but one of the most F'd up series I ever saw....

I would also say that FMA was very good, both runs.

The first run is a little more fantastical, and the second gets down to brass tacks faster, but each is worth watching. (If you watch both, you can skip the first 8 or so episodes of FMA:B...)
 
FMA was OKAY at best, certainly not something I would suggest to a discerning individual who doesn't like much anime. for your average anime fan, someone who is entrenched in the genre sure, otherwise meh.

When I introduce people to anime depending on what they want, it's pretty much always Mushi-Shi and Berserk, extremely different series but very very high quality.

Monster is usually too slow for most people
Claymore turns ridiculous but starts out pretty decent
Fist of the North Star is usually too 'old' for most people

etc, etc.

I LOVE Adult swim, from Harvey Birdman attorney at law to the Venture Brothers, but ATHF was just plain irritating.
 
Ok, Shake is a tad bit irritating, however, Carl their neighbor more than makes up for it by being completely hilarious.
 
I'm looking for some good serious anime to watch. However the only type of anime I tend to enjoy are serious anime. However by serious I specifically mean the following:

*NOT serious as in over the top philosophical mumbo jumbo why are we here are we all robots, we are all gia gia is we hippie acid trip wet dream stuff. There is a lot of this shallow shit out there and I hate it.

*NO mecha shit please unless there is something astoundingly good about it and that will take a lot of convincing.

*Along the same lines as the above most action only anime would be out, again unless there's a good reason.

So some examples of what I'm looking for:

Grave of the Fireflies
Wings of Honneamise
Almost anything Miyazaki

Anyone got any recommendations that I haven't mentioned already?

Well you wouldn't like Neon Genesis: Evangelion, despite it being completely awesome. Watch it, it's like... well acid in the form of an anime. It really is exactly the opposite of what you described. So watch it!

(If you marathon the entire series with a few friends... it's a good night)
 
Squidbillies is the worst piece of shit they ever put on that channel. ATHF was pretty funny, no where near as bad as Squidbillies imo. Plus the movie blew my mind.

The greatest anime you will ever watch, however, is Clannad After Story. You will need to watch Clannad first to get it, though. You may find the first season and the first few episodes of After Story to be slow, but trust me: it's the number-one top-rated anime on animenewsnetwork for a reason. You will NOT regret it. It's the best anime I've ever seen, and I honestly highly doubt there will ever be another like it.

I also enjoyed Toradora.
