Who'd a thunk chicken fried with onion, tomatoes, carrots, spinach, homegrown chilli and a dash of Worcestershire sauce, served with a big heap of creamy mashed potatos, could taste so damn good?

I just fried it, onion first, then added the chicken, then the carrot, then the rest of it, added a bit of water & let it simmer down for about half an hour...used loads of butter & full cream milk in the potato of course :D

MY Family Recipe for Tangy Hot Wings

Mix:

2 Cups Franks Red Hot pepper sauce
1/2 Cup of Apple Cider Vinegar
1 Stick of Parkay Margarin
1 Tblspoon Ground Parsley Leaves

Bring to a boil until the butter is completely melted, stirring contantly.
Remove from heat.
Spoon over Deep Fried Chicken Pieces.
(Properly deep fried chicken, must be deep fried in oil at 400F for at least 12 minutes, to ensure completeness of cooking.)


**Warning, do not attempt to inhale (breath) the sauce.**

Cake:

3 cups of shredded (like with a cheese grater) raw (choose one): zucchini (washed but not peeled), pumpkin (peeled), apple, carrot (works best with finely grated), or whatever you think will taste good and is crisp enough to shred
2 cups sugar
1 cup vegetable oil (I like canola)
4 eggs

2 cups flour
1 tsp each: baking powder, baking soda, salt
2 tsp or more (I use about a tablespoon) cinnamon
nuts, raisins, dried currants, dried cranberries, etc if desired (I usually omit)

Mix baking powder, baking soda, salt & cinnamon with flour, add the rest of the ingredients and mix well (you can use a spoon if you want, it doesn't have to be mixed for that long.) Pour into a greased and floured cake pan (I use a 9x13x2 pan) and bake at 325 F for 50-70 minutes. Start checking the cake at 50 minutes and take it out when the center is cooked and the edges spring back when touched.

I won a contest with this recipe once. It's absurdly easy to make and is really good. You can frost it but it doesn't need it.

Ground Beef & White Rice: One night during my lifting routine I was really hungry and looking for something quick...so I came up with this.

2 cups white rice
1/2 pound of ground beef
some sort of sauce...I really like bacon ranch.


Brown the ground beef while the rice is cooking, drain off excess grease. When both are done, combine them. I usually put some sort of sauce on it...ranch, brown gravy, something to take a little of the dry edge off.

I never claimed this to be healthy :D

Here is a killer recipe for making some skewers. Simple and really good.

? 1lb beef tenderloin (or top sirloin)
? ½ lb bacon
? 2 tablespoons olive oil
? 2 tablespoons lemon juice
? 1 tablespoon chopped onion
? Salt and ground pepper.
? Wood skewers.

Preperation:
Soak wood skewers in water for at least one hour before adding meat.
Cut beef tenderloin into 1" square pieces. Marinate in the oil, lemon juice, salt, pepper and minced onion for about 1 hour. Cut the bacon in squares and place onto skewers, alternating bacon and beef squares. Grill until brown. Serve hot.
