Hey Guys and Gals,

The other day I was thinking about the tremendous number of people who frequent AT from all over the globe, and it occurred to me that there are probably hundreds of tasty dishes / desserts that many of us have never had the pleasure to have eaten. So.... I thought I'd start a thread and see if it got much traffic.

I'm personally not much of a cook, but if those of you who are wish to share, then perhaps even we non-cookers can find something to at least try.

Only time will tell if this is a good idea or not.

Anyone willing to be the first?

No one likes my own creations, except for me. :(

My favorite creation (heavilly modified from a different receipe):

Spicy artichoke and olive pasta

[*]1 lb linguine, cooked
[*]15 garlic cloves, chopped and browned in a touch of olive oil
[*]1/2 cup onion chopped and browned
[*]1 6 oz jar marinated artichokes, roughly chopped
[*]30 kalamata olives, roughly chopped and pits removed
[*]1/2 cup pine nuts
[*]6 red fresno peppers (very hot); roasted, seeds removed, and peeled
[*]1/2 cup fresh mozzerela cheese, chopped and barely melted in

Mix it all together and eat.

I tried this once. I got a number of recipes, but I recently found out I'm allergic to wheat. There's only three but knock yourself out: (you may have to ask welst10 and Kenny1234 for permission for theirs)

One my family makes a lot is called, corn hamburger and Tomato.

Ingredients:
1 lb ground beef
2 regular sized cans of Tomato Soup
1 can of canned corn
Olive Oil
Seasonings
Water

Directions:
Brown the Meat and add seasoning salt to taste (sometimes my mom adds some garlic powder) in a large deep, pan on medium heat. (5 or 6)
After the meat is browned, then put in the tomato soup, then add 1/2 a can's worth of water
then add the corn. Stir it all up and then cover it and simmer. Stir occasionaly until it's heated thoroughly.

Thow some on some buttered toast on a plate and eat it with a fork. It also tastes good in a hard shell taco.
It usually will feed a family of 3-4

vidalia onion (or white sweet onion)
butter (preferably the real stuff)
beef bullion cube

clean onion (cut off top and bottom, peel outter layer)
remove about 3/4 of the core, leaving the bottom intact (butter knife works well if you don't have an apple corer)
make a plus sign(+) or asterisk(*) shaped cuts that go about the same depth as the pit you've created
drop an unwrapped bullion cube in, fill bit and cuts with butter - put some extra butter on top
season with salt and pepper
wrap in aluminum foil

grill over direct medium heat for about 40 minutes (or until soft)

Chipolte's Guacamole Recipe

Ingredients:
1 large ripe Hass avocado, peeled,pitted
2 teaspoons fresh lime juice
2 Tbsp chopped fresh cilantro
1/4 cup finely chopped red onions
2 cloves garlic, finely minced
1 serrano chili, seeded,chopped
1/4 teaspoon salt

Directions:
1. Mash up avocado with a fork or electric mixer.
2. Add lime juice.
3. Add all other ingredients and blend well.
4. Serve with tortilla chips.


Chipotle's Chicken Marinade


1 (2 ounce) package dried ancho chiles
1 teaspoon black pepper
2 teaspoons cumin powder
2 tablespoons fresh oregano, chopped
6 cloves garlic
1/2 red onion, quartered
1/4 cup vegetable oil
4 chicken breasts (6 ounces each)

Soak dry chilies overnight in water, until soft. Remove seeds. Add allingredients except meat in food processor. Puree until smooth. Spread mixture over chicken, or other meats and refrigerate at leastone hour, up to 24 hours. After marinating, heat grill to about 400 degrees F, or if cookinginside, heat small amount of oil in skillet or grill pan over highheat. Salt meat to taste (optional), and grill lightly, turning onlyonce, until done. 4 minutes per side of chicken. Recipe will make four burritos.


Chipotle's Basmati Rice Recipe


1 teaspoon vegetable oil or butter
2 tsp. fresh cilantro
2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 Lime

In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Fluff rice with a fork.

Wonderful potatoes

Ingredients:
Potatoes
Onions
Thyme
Bacon (not those thin slices, chunks)

Peel the potatoes. Put some olive oil and some butter in a frying pan. Dice onions. Put said onions and the bacon in the pan and let bake for ~10 minutes. Stir occasionally. Slice chuncks of potato. Add said potato. Let bake for ~15 minutes. Add thyme (3-4 tbsp), bake for ~5 minutes. Serve.

One of my favorites:

4 (6 to 8-ounce) strip steaks, 3/4 to 1-inch thick
Kosher salt
2 teaspoons black peppercorns, coarsely crushed
2 tablespoons clarified, unsalted butter
3/4 cup beef stock or broth
3 tablespoons cognac
3/4 cup heavy cream
1 tablespoon green peppercorns in brine, drained and slightly crushed

Preheat oven to 200 degrees F.
Sprinkle steaks with kosher salt and crushed black pepper. Heat butter in a 12-inch, heavy bottomed saute pan over medium heat. Once butter is hot, add steaks and cook until browned on both sides, about 2 minutes per side for medium-rare and 3 minutes per side for medium. Remove steaks from pan and place on a rack set on a sheet pan; place in oven to keep warm.

Add the stock to the saute pan and whisk until the crispy bits release from bottom of pan. Allow the liquid to reduce for 3 to 4 minutes over medium-high heat. Add cognac, heavy cream, and green peppercorns to the pan. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will take 5 to 7 minutes.

Season the sauce, to taste, with kosher salt. Place steaks on plates, top with sauce, and serve immediately.

"Spanish Rice"

  • 1 Pound Ground Beef
    2 Packs of Lipton's Spanish Rice
  • Brown the ground beef, seasoning to taste. (We use a little Mrs. Dash Original Blend)
  • Drain any greese from the pan.
  • Cook the Spanish Rice, per package instructions, in the pan with the meat.
  • Serve with Salsa and Sour Cream. ( Optional :) )

You could modify the meat-rice ratio... the one listed is the one we use.


"Pink Salad"

My grandma taught me this receipe. I'm not sure if it had a "real" name, but I always called it "Pink" Salad because it's Pink...and I was little at the time... so it made sense then. :)

  • 1 tub Cool Whip (thawed)
    1 can Fruit Cocktail (drained)
    1 tub Cottage Cheese
    1 package Strawberry or Cherry Jello
  • Mix Fruit Cocktail, Cottage Cheese, and Jello together, until well blended.
  • Fold in the Cool Whip, careful to maintain "fluffyness".
  • Chill

Cool Whip comes in two sizes (I don't know their measurements though). If you use a large tub, then use the large can of fruit, the large tub of cottage cheese, and the large box of Jello. If you use the small tub of Cool Whip then use the smaller package of each item.

The flavor of Jello is a matter of taste. I've used Lime for a "Green" Salad and Orange for an "Orange" salad.

Perhaps people could give their recipes a name before the recipe. Might also help to list the type of dish. For instance:

You know what's a really good breakfast?
bread + dip it in a bowl of sugar each bite :D

and that's about the extent of my cooking :p

I bet it looks the same coming out as it did going in.

This is my favorite and easiest dessert to make that will wow guests or just your s/o.

Molten Volcano Cake with Sugar Coated Raspberries
INGREDIENTS:
1 cup unsalted butter or unsalted margarine*
8 ounces semisweet chocolate chips, or bars, cut into bite-size chunks
5 large eggs
1/2 cup sugar
Pinch of salt
4 teaspoons flour (or matzo meal, ground in a blender to a fine powder)
8 extra-large paper muffin cups (or use regular paper muffin cups, which will make 12 cakes)

Garnish:
1 (6 ounce) container raspberries, barely moistened and rolled in about
1/2 cup sugar right before serving

DIRECTIONS:
1. Melt butter and chocolate in a medium heat-proof bowl over a saucepan of simmering water; remove from heat. Beat eggs, sugar and salt with a hand mixer in a medium bowl until sugar dissolves. Beat egg mixture into chocolate until smooth. Beat in flour or matzo meal until just combined. (Batter can be made a day ahead; return to room temperature an hour or so before baking.)

2. Before serving dinner, adjust oven rack to middle position; heat oven to 450 degrees. Line a standard-size muffin tin (1/2 cup capacity) with 8 extra-large muffin papers (papers should extend above cups to facilitate removal). Spray muffin papers with vegetable cooking spray. Divide batter among muffin cups.

3.Bake until batter puffs but center is not set, 8 to 10 minutes. Carefully lift cakes from tin and set on a work surface. Pull papers away from cakes and transfer cakes to dessert plates.

4. Top each with sugared raspberries and serve immediately.

This is my panty dropper cheesecake.

Yeah, its that good.

Citron Cheesecake

Orange Glace

2 C. sugar
1 C. water
1/4 C orange rind (grated)
2 Tbls orange extract

Place sugar, water and orange rind in a sauce pot, cook over med high heat until it reaches 225 f. on a candy thermometer. Add orange extract and cool to room temp. Keep at room temp.
(I use a tad bit less extract and dont go to 225)

Strawberry sauce

Place 1 (16oz) frozen strawberries (ones with sugar), add another 1/4 C. suagr in a blender, blend till smooth. Refridgerate.

Cheesecake

In a 9 inch springform pan grease with Pam. Add 14 oz graham cracker crumbs, 8 oz melted butter and 3/4 C. powdered sugar that has been mixed well. Press into bottom of pan until firm.

Double Lemon Cheesecake

24 oz Cream Cheese
1 C. sugar
3 Tbls. flour
2 Tbls fresh lemon juice
1 Tbls grated lemon peel
1/2 tsp vanilla
3 eggs
1 egg white
1 tsp salt

Microwave cream cheese for 2-3 minutes until hot. Blend in the sugar until mixed very well. Add all other ingredients and mix well.

Pour over graham crust and bake @ 325f for 55 minutes until set

While thats baking....

Key Lime Pie

4 egg yolks
1 14oz sweetend condesned milk
1/2 C. Key Lime juice
2 tsp grated lime peel

Mix all together well.

When Cheesecake is firm and set, pull out of oven and pour Key Lime mix over the top and spread evenly.

Place back in oven @ 350f and bake 12-15 minutes.

Cool and refridgerate overnight

Mix

1 1/2 C Sour Cream
2 Tbls sugar
1/2 tsp vanilla
1/8 tsp salt

Spread mixture over cool cheesecake and bake @ 425f for 5 minutes to glaze. Place back in fridge 1 hour.

RED LOBSTER CHEESE BISCUITS
2 c. Pioneer or Bisquick biscuit mix
1 egg, beaten
Scant 1 c. milk
1/4 c. butter, melted
2 c. grated sharp cheese

Mix biscuit mix, egg and milk. Mix in melted butter and cheese. Drop by
teaspoonsful on greased cookie sheet. Bake at 400 degrees for 20-25
minutes.

or:

Red Lobster's Cheese Garlic Biscuits Recipe

Ingredients:
2 cups buttermilk baking mix
2/3 cup milk
1/2 cup shredded Cheddar cheese
1/4 cup butter or margarine, melted
1/2 teaspoon garlic powder
Directions:
1. Preheat oven to 450 degrees F. Combine 2 cups buttermilk baking mix, 2/3
cup milk and 1/2 cup shredded Cheddar cheese with a wooden spoon until soft
dough forms. Beat vigorously 30 seconds. Drop dough by heaping
tablespoonfuls onto an ungreased cookie sheet. Bake 8 to 10 minutes, until
golden brown.

2. Combine 1/4 cup butter or margarine, melted, and 1/2 teaspoon garlic
powder; brush over warm biscuits before removing from cookie sheet. Serve
warm. Makes 10 to 12 biscuits.
