simplest fried rice is just egg and rice, seasoned with salt and white pepper.

the one I cooked today is

scallions, chopped up
pork, thin slices, I used the ones that is sliced and frozen, so I cut them even smaller.

frozen diced mixed veggies

egg

day old rice

heat up wok with oil (quite a bit of it)
stir fry pork with scallion, season with a bit of soy sauce
remove pork from wok

put in a bit of oil, dump in frozen diced mixed veggie stir a bit, then dump in rice, making sure you break up the rice into grains.

add egg, stirfry some more, season with white pepper and salt

add in pork again, mix well and serve.

Diced Ham is good in stir fry too.
