Maybe they're not all the same, but the one I used to use in a kitchen worked like this:
You cut off each end of what you're cutting (in my case, roast beef) to make them flat. You put it on this slider with a handle, and the flat side would be pressed up against this piece of metal. You push the sliding thing forward and it would push the meat into the blade, cutting at whichever thickness you selected.
I used this kind of slicer.

But yeah, no reason to buy a meat slicer if you could just buy a bread slicer.

I've been cooking Gluten-Free bread and it's VERY crumbly. Makes it difficult to cut good slices![]()
