Anyone know what the white dip is that's served in Mexican Restaurants?

We always get refried beans with queso on top at the local mexican restaurants (most of them are pretty authentic as far as I can tell - they are all also staffed by mexicans :p). I say they are authentic at least to true tex-mex, never had mexican food south of the border. I've been to a mexican restaurant on the River Walk in San Antonio and the mexican restaurants in Toledo, OH taste the same. So either all the Mexican restaurants I've been too are authentic, or at least are consistent in preserving the tex-mex style.

It's queso blanco. It doesn't really have a super cheesy taste nor is it really thick. Made out of chijuaha (sp?) cheese.

I think this is correct. I went to school in central VA, which does have a large mexican population, and I remember eating this stuff too.

You'd be surprised how much authentic Mexican and South American food you can find in VA.

I don't know what it is either, but in VA Beach there is a Mexican restaurant called Guadalajara that serves it. Deliciousness. I wish there was a Mexican restaurant up here in BFE, NY that was half as good.

The usage of the word Crema in Mexican Spanish without any modifying words does not mean sour cream or heavy cream. Mostly it would mean like hair conditioner or lotion. Slang it means jizz.

Eh? Then what is it called then? AFAIK the word crema by itself is used as a general term to refer to any sort of dairy cream. It can also be used to refer to lotions and whatnot. Anything "creamy" I guess.

Queso = cheese, so I guess what the OP is talking about is some sort of cheese-cream dip?

Go to your local supermarket and look in the refriderated section near the cream cheese and cottage cheese. You should see something either labled as "mexican" cheese or "farmers" cheese. It's usually in a big round block.

It melts down easily and is most of what goes into that queso dip. Sometimes they'll drop a little green chillies in there for extra flavor.

MOST of the Mexican restaurants here add a bit of the fine white powdery queso fresco as a topping on foods. Not very "cheesy," but it's good.

The fine white powdery stuff is usually cotija cheese. (basically Mexican parmesan).

The white salsa is great combined with El Yucatan green habanero salsa. Dip it in the white salsa first, then pour on a heaping dollop of El Yucatan; delicious :^)

Just went to Wal-Mart on some internet advice and in the fridge at the deli found Gordo's White Queso Dip. It's pretty close though they use a different cheese than the kind at the restaurant.

Still brings back the fond memories!
