I've been buying alot from a seller from texas at decent prices...
I'm thinking about just starting to make my own.
What's a good dehydrator or jerkey maker to get and does anyone have any info on recipes etc?
 
i have and it is so much better then anything you can buy. my dad and i used to use the little chief electric smoker or whatever it was called from cabelas we would also use some seasoning packs from there as well and combine a few of the different flavors to get it just right. it was amazing. we also used some bison for it a couple times a a friend owned a bison farm. that stuff was good because it was very lean.

i tried this recently with soy sauce soaked beef. It burnt at the lowest temp my oven would go and it wasn't very good. I would reccommend getting a dehydrator.

i used to use a dehydrator and even that is not very good once you have used a smoker. it gives it a whole different taste.

He was clear to point out NOT to use fiberglass filters 😉

But fiberglas is delicious and makes neat shapes in your bronchioles!

I want to try the Alton Brown jerky recipe as soon as possible.
 
I use a dehydrator and the Hi Mountain Cure & Seasonings and it turns out great if I follow the directions. I ususally add more black or red pepper.

I've made deer, turkey, & beef.

those are the seasoning i use. they are delicious.

i read the altons recipe, at the end it says store in a cool place for 2 to 3 months...so you cant eat it right away?

usually that sort of statement means you can store the end result for 2 to 3 months before you need to throw it out
 
Friend of mine has an old upright freezer in his backyard that he's emptied and converted to a smoker. He'll smoke 50lbs of meat at a time :shocked: It is sooooooOOOOooOOoOOoOoOoOOOOOOoooOOOOo gooooood mmmmm 😎

How hard of a project was it to convert a freezer into a smoker? I just hauled a freezer out of my basement (still runs good, as far as I know; I just don't need 2 extra freezers.) It'd be more fun to do something useful with it, rather than take it to the dump.


Oh, and I make my own jerky; venison jerky. I used to cut the meat into strips, but found that if I grind it & use a jerky shooter (extruder with choice of a couple sizes of round (think slim jims, or thicker slim jims), or narrow strips. It gives me a hell of a lot more control over the dehydrating process and more consistent results.

 
the best recipe i have found for jerky is alton browns. i made some today, had a real nice piece of flank steak.

2/3 cup worchestersire
2/3 cup soy
1tbsp honey
2 tsp onion powder
1 tsp fresh ground black pepper
1 tsp crushed red peppers

i use a dehydrator.

man, that makes some great jerky, way better then the spice packs.


 
Personally, if I'm going to use "ground beef", I'm going to grind my own for these purposes.
