Friend of mine has an old upright freezer in his backyard that he's emptied and converted to a smoker. He'll smoke 50lbs of meat at a time  It is sooooooOOOOooOOoOOoOoOoOOOOOOoooOOOOo gooooood mmmmm
How hard of a project was it to convert a freezer into a smoker? I just hauled a freezer out of my basement (still runs good, as far as I know; I just don't need 2 extra freezers.) It'd be more fun to do something useful with it, rather than take it to the dump.
Oh, and I make my own jerky; venison jerky. I used to cut the meat into strips, but found that if I grind it & use a jerky shooter (extruder with choice of a couple sizes of round (think slim jims, or thicker slim jims), or narrow strips. It gives me a hell of a lot more control over the dehydrating process and more consistent results.
