HTC released their source code for One and Droid DNA
What will this actually do for us? Will it help those building CM 10/10.1?
I hear about source codes all the time, but I never truly read into what they are actually for.

You take the source code and create your own unique Rom. Tweak it, remove bloat and such. But the phone most likely needs root and s off.
What exactly is S-off?
Security off. Allowing you access to custom kernels, CPU and gpu scripts. You flash these and improve battery, CPU performance as well as custom apps and tweaks
Meaning its no longer locked in what ever software came from your carrier. You can also flash custom radios.
How is a HTC phone rooted without SOFF? Exploits?
I ask because you root Galaxy devices usually by installing a new kernel.

I ask because you root Galaxy devices usually by installing a new kernel.
If you're not an ATT, you just unlock the bootloader via HTCdev, flash a recovery and the root files (doesn't require an exploit).
S-off is usually gained via exploit after this (sometimes never found).
If you're on ATT, then you hope there's an exploit to gain root. And those exploits can get ugly to do (as sze5003 and his Rezound example can attest to).
