Butter is only recommended to be kept in the fridge. Many dairies and stores will say butter has to be refrigerated, but if you keep it sealed in a dish or plastic butter container or whatever and do not leave it sitting on the countertop in the middle of summer, then it's not going to hurt you. You do have to use the butter and not leave it out for two weeks or something like that. The longer you keep it out, the quicker the quality of the butter goes down. If you use an entire stick of butter in a couple of days, then quality is not a factor. I just can't stand trying to spread butter when it's just come from the fridge and I'm not usually thinking about the softness of butter one hour before I need it.

The same misconception is true of eggs. Conventional eggs should be stored in the fridge, but free range or organic eggs do not. Europeans buy eggs right off the grocery store shelf or even off the back of truck or milk float. (England)

American's are bred to put everything in the fridge. It's not the product that will hurt you, it's all the crap preservatives and stuff manufacturers add that goes bad if it's not refrigerated.
