Alright folks...it's time to make Dain's Rum Cake.

Rum Cake

1 cup chopped pecans or walnuts
1 pkg (2-layer size) yellow cake mix
1 pkg (4-serving size) Vanilla Flavor Instant Pudding & Pie Filling
4 eggs
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup dark rum (80 proof)

Sprinkle nuts evenly in bottom of greased and floured 10-inch tube or BUNDT pan.

Combine cake mix, pudding mix, eggs, 1/2 cup water, oil and 1/2 cup rum in large mixer bowl. Blend; then beat at medium speed for 2 minutes.

Pour into pan. Bake at 325 degrees for 60 minutes or until cake springs back when lightly pressed. Cool in pan 15 minutes

GLAZE

1 cup sugar
1/2 cup butter or margarine
1/4 cup water
1/2 cup dark rum (80 proof)

Combine sugar, butter & water in a saucepan. Bring to a boil; boil 5 minutes, stirring constantly. Remove from heat. Stir in Rum. Return to heat and bring just to a boil.

Remove cake from pan onto plate; prick with cake tester. Spoon warm glaze over warm cake.


GARNISH (if desired)

Place pecan halves in decorative fashion on top

And/or, after cake is cooled or just before serving, add decorative butter cream frosting dollops on top outer edge.

Keep covered after cooled. Often tastes better 2nd day.

lol...your loss. This recipe is so freaking amazing to make. I really have no idea what happened to the rest of the bottle of rum.

Real Trini black cake takes days (at least) to let the rum soak. The badass ones, weeks. Is that manual enough a process for ya? :p

here's one that should work for you

Mm, I'm not so much for the fruit cake aspect of it, I don't think. Is it good still? Prunes + raisins != good cake, usually.

I woke up this morning and I was still buzzing. Not to mention I had the shakes like a motherfvcker. lol

Yeah, I pretty much felt like sh!t all day. Another technician commented on my fingers shaking. Finally, around 3:00PM I snuck a fifteen minute nap in while driving to a clients office. :laugh:

That's almost literally how it went. One cup of rum for the cake, the rest of the bottle for me. I even measured it out first so that I wouldn't be drinking from the bottle that was going to be going into the cake. :laugh:
