Evolution doesn't require faith the way creationism does. Creationism has one, single answer on everything related to the how and why of all species on earth. God created them.
Do we have proof for this? Can we do any tests to prove this 'theory'?
As for evolution, it's a quite new theory, still under heavy development, but there has been made a lot of progress the last few decades. What exactly drives evolution is still largely unknown, but mutations and some other, not yet fully understood, mechanisms might play a big role.
And those 'studies of animals adapting to their surroundings' is part of this search for what drives evolution.

FYI there have been multiple Humanoid species on this earth. No 'holy book' of whichever religion says anything about those (let alone dinosaurs, or kangaroos) Humanoids.
Also, there's proof for the evolution of us Humans: fossils of Human species. They all lived in certain times and never together. Characteristics we can see now on today's Humans can be seen on those fossils too.
