Fish is my favorite food to cook. Here is one of my favorite salmon recipies from Cooking Light magazine. It is SUPER easy and is SUPER good. This is best used when real salmon is in season (ie. sockeye, silver, king). I had it a few nights ago with Atlantic salmon and it was quite tasty. It will slightly blacken around the edges because of the sugar....have no fear though....it will taste amazing 🙂Originally posted by: SagaLore
I want to hop onto this bandwagon, anybody with a game fish recipe, post it here, and I'll put it up on my site. Game fish as in - bass, trout, salmon, catfish, crappie, blue gill, etc. even carp if you have one.
Broiled Salmon with Honey and Vermouth
INGREDIENTS
2 tablespoons honey
2 tablespoons dry vermouth or white wine
1-1/2 teaspoons grated peeled fresh ginger
1-1/2 teaspoons country-style Dijon mustard
1/8 teaspoon salt
1/8 teaspoon black pepper
2 (6-ounce) salmon fillets (about 1 inch thick)
Cooking spray - I never use cooking spray. Just set the fillet on a piece of foil. The skin will stick to the foil and you use a spatula to get the meat, leaving the skin behind.
INSTRUCTIONS
Preheat broiler.
Combine first 6 ingredients in a small bowl; stir with a whisk. Place salmon on a broiler pan coated with cooking spray; brush with half of honey mixture. Broil 8 minutes or until fish flakes easily when tested with a fork, basting frequently with remaining honey mixture.
