2560x1600, only care about Skyrim, which card?

If you play without AA or with lower game settings, does this have any effect on memory usage or is it strictly texture size & resolution?

Certain types of AA use a lot of memory and some games settings will affect it too.

There is almost no difference at your resolution between the HD 7970 and GTX 680 in Skyrim using Ultra settings. The only cause for concern is if you plan on the extensive use of texture mods. If you don't, save the money and get a GTX 680. If you do, spend a bit more and get the HD 7970.
