Oh it does

"All purpose Enrished Pre-sifted Flour"

So the recipee says to replace the 1/2 cup with 7 Tbsp of all purpose flour..so I'm guessing I should using the 7 Tbsp of the flour I got

actually it is far more likely to mean take the measurement given, and sift that.

a food processor will work as well...i usually just use a whisk in a bowl. the idea is to aerate the flour and remove and clumps.

Lots of recipes require careful measurement. Part of the reason for sifting is to get rid of the lumps, part to ensure that you wind of with a specific amount. I ease work in the kitchen by weighing the first time I get a measurement and then using a scale (not volume measure) the next time(s) I make the recipe. A small cheap digital scale is a requirement in my kitchen.

Keep in mind too that there are differences in flour. Sometimes you need more, other times less than a recipe calls for partly because different samples have different moisture contents.

This. For a lot of ingredients, flour especially, weighing is much easier and more accurate.

Whoa whoa whoa... spending time with your mom baking during the holidays is certainly not a reason to turn in your man-card. If anything, that should take you to like... gold status or something. From a female standpoint, I give you extra "man-points".

hmm I always thought you get a better measurement after sifting. sometimes the flour can come out in large chunks - if you measure that then sift you get more than you need.

but yeah weighing is better

There is certainly nothing unmanly about baking. I baked about 12 dozen cookies this past weekend :)

edit: and two loaves of banana bread

weighing is, indeed, better...if the recipe allows for weight measurement.

i used to have a scale, lost it...and never considered getting another, and i bake pretty often, with very, very few issues.

i made pizza last night, have lots of cookies t make for christmas, and expect to make a couple of loaves of bread for some bread pudding.

On Saturday I helped my mom make eggnog cookies and Flan. We made the normal flan for us and a neighbor and an eggnog flan. For the eggnog flan we substituted one can of condensed milk with the same amount of eggnog (basically filled the can w/ eggnog and put that in). I made a rum raisin sauce to go over it. Haven't tried it yet (can't until Christmas :() but it should be pretty good.

On Sunday we baked the eggnog cookies (needed to let the dough chill overnight) and a bunch of other cookies (sugar, chocolate chip, turtle). Also made an egg nog icing to go over the cookies. So yeah.. now we have two turkey-sized platters of cookies that I can't touch. :(

The flan I can ignore because it sits in the fridge, but the cookies are on the dining room table and I see them constantly.

No, just read his post and think about it. He is helping his mother bake. He then has a question about a food prep term. Instead of turning to his mother and communicating, he runs off to teh tubes and post the question on ATOT. Kind of odd, don't you think?

Yes, I can understand that, but I am taking his post for what it is... although I agree he should have turned to her to ask the question. Perhaps he wanted an excuse to post he was cooking with his mum?

Her and Dad went out to do last minute shopping, visit my aunt ect, I stayed back to help her get caught up on the baking.

I'm sure if she was here she would laugh and tell me..

I asked ATOT because than she won't know I didn't know

Does it actually matter if you don't have a sifter? I know one of the cookie recipes I had asked for it and I didn't do it and it came out fine I think.
