Medal of Honor (Allied Assault/Spearhead/Breakthrough era not the later junk)
Motocross Madness (1 not 2)
and uh...maybe Bioshock though I wouldn't name it if the conditions were a lot of replay value.

Grand Theft Auto:Vice City - finished this probably 10 times at least over the years. Completed it a few times on PS2 before getting the PC version.

Final Fantasy VII - Same as Vice City, finished the game on Playstation before getting the PC version.

Burnout Paradise - I'm not a huge driving game fan although I enjoyed the NFS series up to Hot Pursuit 2. It's also one of the very few games I played online and tried to do all of the online challenges, etc. I still play the SP once in a while and just drive around and do stunts, etc.

I'm more of a console game player, at least since the Tandy TX1000 days :)

For PC games:

1. DAoC - was my first MMO. Played a TON of hours. Had 3 accounts, made lots of money, some good friends in it, and PvP was as fun as could be. Then they kept releasing expansions.

2. Diablo II - Put way too many hours into this game to. Endless MF runs. Quit many times, and I always came back....

3. Either WC3 or Rainbow 6 - Raven Shield. WC3 played mostly custom games. R6 was my favorite FPS. The new, crappy ports of these are terrible and disappoint me :(.
