I'd probably do a prime rib roast medium rare with rosemary garlic potatoes and a nice salad with chunks of blue cheese crumbled over it. A good cabernet sauvignon would go well with this and I'd follow it up with a peach cobbler for dessert.

Tomorrow I might give you a completely different menu though.
