Richard Thompson has done a bunch of great ones, including "How Will I Ever Be Simple Again", the Small Town Romance live acoustic CD, disc 2 of You? Me? Us?, etc.

Michael Penn and Patrick Warren were excellent together on the old Unplugged (back when Jules Shear was the host). I really should hunt for a bootleg of that.

I'm one of the few Elvis Costello fans who liked The Juliet Letters with the Brodsky Quartet, and I've watched some great acoustic performances of his alone and with Steve Nieve.

Joemy Wilson's Carolan's Cup and Carolan's Cottage are great Irish Celtic CDs with her on hammered dulcimer plus other players on guitar, etc.
